Pumpkin Protein Pancakes 🎃



My version of baking during this time of year 🤷🏽‍♀️ high in protein, low carb, and a better way to satisfy those pumpkin cravings!


Makes 2 servings:

- 1 cup vanilla protein powder

- 1/2 tsp pumpkin pie spice

- 1/2 tsp baking powder

- 1/2 cup liquid egg whites

- 1/2 cup pumpkin purĂŠe


Mix all ingredients in a bowl, and cook over low-medium heat. Once pancakes start to bubble, flip! Top with shredded coconut, almond butter and a drizzle of sugar free maple syrup 🧡
